Banana Pancakes

Ingredients

1 ripe banana

1/4 cup oats

2 egg whites

1/4 tsp cinnamon

1/2 cup frozen wild blueberries

1/2 tsp arrowroot powder

1 Tbsp water

Optional Toppings

Walnuts, pecans, slivered almonds, shredded coconut, pumpkin seeds, nut butter, or fresh fruit

Directions

Preheat skillet to 375 degrees

Mash banana with the back of a fork in a glass bowl. Whisk egg white and add to mashed banana. Add oatmeal and cinnamon to bowl and mix well.

Pour pancake batter onto heated skillet or frying pan (medium heat). Allow to cook until batter starts to cook along the edges and bubbles in the center. Flip and continue cooking, approximately 5 minutes.

While the pancakes are cooking, add blueberries, water and arrowroot powder to a small sauce pan. Cook on low heat and stir frequently until the mixture begins to thicken.

Transfer pancakes to a plate and top with blueberry sauce. Add optional toppings for extra flavor and fun!

Makes 3-4 small-medium pancakes.
